Tower Garden Recipes with Spinach

Spinach is one of the most popular crops to grow with Tower Garden, and for good reason. Not only is it an excellent source of vitamin K, vitamin A, vitamin C, and folate, it also helps toward our recommended daily intake of manganese, magnesium, iron, and vitamin B2. Spinach is also quick to grow, simple to harvest, and is extremely versatile in the kitchen. 

While this leafy green can taste delicious raw, when picked straight from a Tower Garden, there are so many ways to enjoy spinach and incorporate it into your diet. The next time you harvest your spinach, don’t be afraid to spice things up and get creative.

Creamy Spiced Spinach

Who says spinach recipes have to be boring? Our creamy spiced spinach recipe is by far one of our favorites, and is jam-packed with so many great flavors. Don’t just take it from us, try this simple recipe out for yourself! 

Serves 4 (serving size: about 1/2 cup)

Ingredients

  • 1 1/2 tablespoons extra virgin olive oil

  • 1/4 teaspoon (or more) crushed red pepper 

  • 5 chopped garlic cloves

  • 1/2 cup chopped green onions*** 

  • 3/4 teaspoon curry powder

  • 1 pound fresh spinach***

  • 1/2 cup plain nondairy yogurt OR whole milk Greek yogurt 

  • 1/4 teaspoon kosher salt

Directions

  1. Cook extra virgin olive oil, crushed red pepper, and garlic cloves in a large skillet over medium high heat until garlic begins to sizzle, about 2 minutes. 

  2. Once sizzling, add green onions and curry powder; cook for another 2 minutes. 

  3. Add fresh spinach from your Tower Garden to the pan in batches, stirring until wilted before adding more. 

  4. Stir in yogurt (or nondairy substitute) and kosher salt, mix well.

  5. Serve hot and enjoy. 

Simple Sautéed Spinach



Tired of sautéing your spinach with the usual salt and pepper? Take your sides to the next level by using just a few basic ingredients you likely already have lying around your kitchen. You don’t need to be a professional chef to make this recipe, but it’ll sure taste like it came from a restaurant. 

Simply follow our easy recipe to create a dish that’ll keep you coming back for more.  

Serves 4 (serving size: about ½ cup)

Ingredients

  • 1 tablespoon olive oil

  • 1 medium white onion, chopped

  • 4 chopped garlic cloves

  • 1 pound fresh spinach***

  • 1 ½ teaspoons garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup grated Parmesan cheese (optional)

Directions

  1. In a large skillet, heat up olive oil.

  2. Add garlic and onion and sauté for 2 minutes. 

  3. Add spinach and gently toss to mix.  

  4. Cook until spinach is wilted. 

  5. Season with salt, pepper, and garlic powder. 

  6. Sprinkle with Parmesan cheese (optional).  

  7. Serve immediately.

Spinach Pesto

While pesto is typically made using basil, which can also be grown with Tower Garden, this recipe calls for some delicious, freshly picked spinach. With the exception of pine nuts, this recipe utilizes a lot of ingredients you probably have inside your pantry or refrigerator. So whip out your blender, assemble the ingredients listed below, and get cooking! 

Ingredients

  • 3 cups spinach (can also use basil, arugula, or any greens!)***

  • 1 clove garlic

  • ⅓ cup pine nuts

  • 2 tablespoons grated Parmesan cheese

  • ½ teaspoon salt

  • Pinch of pepper

  • ½ cup olive oil

  • ½ lemon

Directions

  1. In the bowl of a food processor or blender, add the spinach, garlic, pine nuts, Parmesan cheese, salt, and pepper, and pulse until well combined, but not totally smooth. 

  2. Slowly drizzle in the olive oil while pulsing. 

  3. Add lemon juice, salt, and pepper to taste.

  4. Store in a jar and keep refrigerated.
